There are lots and lots of vegetarian period recipes--designed to satisfy
religious requirements. Look for recipe titles referring to "fast day" or
"lent." There is even a fake meat patty made from chickpeal flour
(counterfeit Isfiriya of garbanzos) in the 13th c. Andalusian cookbooks.

I certainly don't. When Elizabeth and I design feasts, we try to make sure
that there are enough substantial dishes that vegetarians can eat. That
doesn't require tofu.
