SC - Accomodating Vegetarians at Period Feasts

Anahita,

I'm working on an article that will be a class for AEthelmearc War
Practice and for Pennsic on The Kitchen Steward and the Ember Days.  Are
you coming to Pennsic?  If not, I can send you a copy afterwards.

It will have some of the period recipes that work for vegetarians, a few
of my adapted recipes that now work, and probably a discussion of how to
adapt a recipt.  Adamantius is looking for a period mention of tofu for
me.  What is seitan?  Never heard of it.

For the feasts that I'm planning, this year, plus some with which I'm
helping, there's plenty of meat for the majority, plus some goodies for
all that will be suitable for those who want to skip the meat.  There are
also a few substitutions if I think the menu is sparse with the meat
items removed.  

I have a few sort-of-peri-oid things to try especially for the
vegetarians.
