>From what I've been observing, wood apparently has anti-bacterial qualities
which take the meat specific beasties down to nothing, where plastic gives
them a growth medium- I guess the plastic, once cut or scored, can never be
thoroughly cleaned.

I'd be very interested in studies on these anti- bacterial qualities to find
out which woods are most effective, and what their half life is.
