It's not just in Lord Ras' Zoo. Take a look at these files in the FOOD
section of my Florilegium:
exotic-meats-msg  (49K)  4/ 1/99    Period and SCA exotic meats. Swans,
ostrich, 
                                       eels, peacocks, crawfish, dormice, snails
organ-meats-msg   (40K)  4/26/99    Period cooking of organ meats.

I believe most of these came from folks here on SCA-Cooks.
