Logistics
1 : the aspect of military science dealing with the procurement,
maintenance, and transportation of military materiel, facilities, and
personnel
2 : the handling of the details of an operation 

In my opinion, logistics (especially as regards the first definition!) is
the most important thing for the Kitchen Steward to know, and I wish someone
had told me that. 

Once she or he has done all the creative stuff of deciding the menu, test
cooking etc there's the logistics to consider. For example; How are you
getting everything there? (especially important for those of us that don't
drive - yes there are such strange animals <g>) Do you have enough big pots
and pans to cook everything at the same time? (That is one that is a problem
every time)  What are the facilities? Do you have enough oven / stove top
space to heat everything at once for each course? Have you worked out the
logical order everything is to be done in? Do you have enough serving dishes
(don't worry about servers. Food is there - they will come...)? Is it a
Kingdom event i.e. liable to be set back? How will this effect you? Plus a
lot more other people have mentioned. 

What every Kitchen Steward should be told is that for every 1 minute of the
fun stuff, i.e. researching, menu planning, test cooking and eating, there
are at least 3 minutes of detailing and organisation work. And that's
probably a low guesstimate. A lot of first timers don't realise that. I sure
didn't. If you like writing lists, then this is the job for you! (Actually,
maybe you better not tell them that! Wouldn't want to scare them off <grin>)
