In period, are fresh leeks available at a time of year when it is cold
enough outside to do the chilling?

More generally, I don't think that "it uses no non-period ingredients,
tools, or methods" is very strong evidence that a modern recipe was made in
period. A cuisine is defined by more than ingredients, tools, and methods.
Consider (my favorite example) the meal a chinese cook would produce out of
ingredients purchased at an ordinary American grocery store and the meal an
American cook would produce out of ingredients purchased at a Chinese
market.
