Ladies and Gentlemen,

I can't think of anyone I know who has more -real- experience in period
cooking than Caroline Yeldham.  Not only is she a good 20th century cook,
and not only is she an interested and careful redactor of period recipes,
but she has what most of us lack - extensive experience cooking period
recipes for a large group on a daily basis in a castle kitchen using
period implements. 

That's why she's this year's guest of honor at CookCon in January.
