I don't know if you found what you were looking for in the Florilegium or not.
But these files in the FOOD section are where I would suggest looking first:
rice-grains-msg   (69K)  3/ 4/99    Medieval rice and grains. Recipes. Cooking.
frumenty-msg      (48K)  4/ 7/99    A period cooked grain dish, often barley.
