Unfortunately I do not have a copy of this book yet, but I suspect _A Second
Handbook of Anglo-Saxon Food and Drink: Production & Distribution_ by Ann
Hagen might be of use on this.  Granted, it is obviously very localized to
the Anglo-Saxons, but is there any reason to believe an English hen was that
much different than say a German, French or Egyptian hen?  If anyone has a
copy of this book I be very interested in hearing your opinion of it.  I'm
thinking about purchasing it, but have many others on my wish list as well.
