Sigh. I *knew* I should have typed in a few more lines. :-)

The next line after the stuff I previously quoted is:
"(Today, "grits" can be used both as a singular or plural noun. In 
other words, both "grits are" and "grits is" are acceptable.)
"Hominey" has come to refer to corn soaked in a solution of water 
and lye to remove the husks before milling into grits."
