I am not a vegetarian; I just felt that a meal consisting of fruit, veggies,
bread, and possibly one other starch dish would, to me, feel more like a
lunch than a feast. Certainly fruit, veggies, and bread are common dayboard
fare, sometimes with little or nothing else. A vegetarian might well feel
differently if they are used to similar meals.
As far as the protein issue, I'm not a nutritionist either, and about all I
know about vegetarian cooking is that the difficult things to get are protein
and iron. Most of the vegetarians I've spoken with like to have something
containing protein in every meal - cheese, beans, whatever. I always try to
have a bean dish amongst my vegetarian items for just this reason. Certainly
I don't feel that we need to stick to modern health fads or diet fads, but at
the same time I think we should try to make a reasonably complete meal
available for most people. I certainly don't see anyone emulating some of
the period menus I've read which run to 50% or more meat dishes and very
little else.
