Unless there is a particular reason you are wanting to use chocolate
for this, why not do something I think is more period, although I don't
think I have proof of this - Make the devices out of colored sugar "glass"
so they resemble stained glass windows. I think there may be some 
directions on how to do this in the sotelties-msg or candy-msg files in
my Florilegium. I've seen some beautiful sotelties done this way. Painted
sugar plates would be another way and definitely late-period. Check the
sugarplate-msg file.
