As a suggestion, Mel, you might look into Byzantine/Turkic recipes from that
period, as well as Scandinavian recipes. The reason being, that at that
time, the Khazars were running/maintaining the Silk Road, from the Byzantium
area through to Scandinavia, with Kiev being a fairly major stop on the way.
That would also give you access to some of the Eastern spices.
