The _Ain i Akbari_. It is one volume of the Akbarnama, a multivolume book
about the emperor Akbar written, as best I recall, by one of the people at
his court.

The _Ain i Akbari_ includes ingredient lists, with quantities but without
instructions, for thirty dishes, plus the bread recipe, plus instructions
for making arrack (distilled drink from sugar) plus lots of other things
about life at Akbar's court--including a description of 16th c. chemical
refrigeration. It was translated into English  in the 19th century,
reprinted in the 1930's.
