They did both Hamburg Parsley and Flatleaf parsley are ancient. Curly leaf 
parsley is modern.

Inferior roots? Since Hamburg Parsley is grown specifically for the roots, it 
would not have been considered to have 'inferior' roots. Possibly but it 
would certainly have been a waste to raise parsley roots for the pigs. 

Anyway, the people of the middle ages may have had more uses for some things 
than now but they most certainly would not have gone out of their way to find 
creative ways to eat the garbage. The 'little used' foods like blood and 
organ meats, etc., are not as little used today as you seem to imply. It is 
only within this past quarter of a century that common use of these items has 
lessened.
