There are several recipes in this file in the FOOD section of my Florilegium.
Whether these include the specific recipe you are thinking of, I can't remember.

Because you need not save all of your roots to have enough to plant for
crops the next year. Also, many roots do not need to be planted whole. You
can cut the root into several pieces and get a seperate plant from each.
I don't think you would be harvesting the roots until the end of the season
or past it. By that time, the leaves are dead anyway.
