That would be both here, the pheasant is  the same bird, it was introduced 
here in the 1700's.  The english nobles brought their
hunting stock with them.

Quail and Partridge are basicially the same, just some small plumage 
differences.  European Robins are a smaller brownish speckled bird.
All the above birds are in the states now though, once again thanks to  our 
European forefathers and game stocking.

As to to how they can be used, grouse and pheasant are both good spring and 
fall food. They aren't hunted during the summer for mating reasons and are 
the best in the fall after they've fed all summer (yum!).
