SC - Period Beet Recipes (was: summer feast)

I believe that according to lrd Ras, this recipe was based upon a 15 century 
recipe that used spinach / or chard.  this reminds me of a spinach quiche.  
Real Knights don't eat Quiche.   They make their squires eat it. hehehehee
