Plenty of easy things. Bring something precooked (the "icelandic
chicken" is great for grabbing while setting up camp and nothing can be
found), and then cook things like:

brotchan folchep (semi-documented, good eating)
losyns or macrows ("mac & cheese": the period version, not Krafts!)
potage from meat
beef y stewed
rapes in pottage
caboges
stwed mutton
egredouncye

Serve rice, frumenty or bread with these.

There are desserts if you want them (Creme Boylede made with actual free
range chicken eggs -- they where running around in the yard where we
bought the eggs -- was almost golden yellow and _very_ dangerous to ones
health), salads with "period" ingredients, fruit, etc, are all add ons
that are relatively easy even in the field.

All of this can be done on a one burner camping stove.

P.S. Almost forgot: albolettys (the "scrambled eggs" from "two 15th c
cookbooks") are great as well. You can serve porrige for breakfast.
