The variety of parsley that produces edible roots is raised specifically for 
that purpose. The varieties raised for their leaves are Italian parsley and 
Curly parsley.

This is not a problem because the plant is specifically raised for the roots. 
The leaves are edible but there are fewer of them and they are coarser and 
harsher flavored than the varieties used for their leaves.
