If anyone wants to find out more about falconry in period, check these files
in the ANIMALS section of my Florilegium. The bibliography is particularly
good with LOTS of period texts on falconry.
falconry-msg (29K) 2/18/98 Keeping and flying birds of prey.
p-falconry-bib (14K) 5/14/96 Biblio. of period falconry texts.

I think the message file has more on modern falconry than period info.
