Ah, Mordonna, "loynes of pork, rawe " indicates the loins, which are the
pork chops, which tend to be considerably tenderer than the raw hams,
particularly if the animal has been active. Straight roasting might not be
the best cooking method for a tougher cut of meat, although it might well
work if something has been done to tenderize it a bit. Deliberate cutting
across the grain, in thin slices, might work......
