Even in Ohio, depending upon weather, I have fresh herbs most of the winter.  
I just plant things in shelter areas away from cold winds.  I would imagine 
that medieval people in Europe did the same thing.  I was also watching a 
history channel show last week (no I do not remember which one) that stated 
that prior to1000ad there was a very long period of elevated temperatures.  
Possibly they had longer growing seasons than we give them credit for.
