Basically, yes.  The gelding is done before maturity sets in.  A fully grown
male (of most species) has scent glands for marking territory and attracting
females.  The meat of a boar would be tougher and gamier than the gelded
animal which has been stuffed with grain to give the meat a much smoother
flavor.
