SC - Pennsic XXIX Butchering class.

I have an idea. Maybe a bad one but if it is possible I would be willing to 
pay for the Pennsic fees for such a person as well as their professional fees.

Would it be possible given the time until the next class to find a 
professional butcher to show how to kill the animals correctly? Such a person 
would have knowledge that would prove invaluable to all the members of the 
class and SCA cooks in general.

Just a thought.....
