SC - Stefan's recent wafer experiment

After the problems I had a week and a half ago making wafers using the
recipe in Polish cookbook, I thought I'd let you all know of my progress.
Thank you to those of you who replied by email to my message.

I tried Admantius' recipe on Sunday night and it worked much better than 
the Polish one. If folks will remember, I was having trouble with the first
recipe breaking apart and sticking to both sides of the wafer iron. Adamantius'
recipe came out rather patchy brown, but I think he mentioned this problem 
also. This time the batter was much thicker. I had to push it off the spoon 
onto the iron, and this was after adding more rosewater. The Polish one
was thick, but I simply spooned it on. I may thicken the Polish batter
I have left and try it again and see if it works better. Although since
it's been in the refrigerator, maybe I should just try it again with fresh
ingredients. I'm wondering if I can make the batter ahead of time, at home, 
on Thursday night and cook it Saturday evening at the event or whether that 
would be a problem because of the eggs in either texture or safety.
 
Admantius' recipe definitely is not as sweet as the Polish one and of
course, doesn't have the saffron taste. I think I would like it sweeter
for a dessert course, but that may not be a medieval thing. I also
brushed melted margarine on the iron this time, instead of trying to pour
on almond oil. I'm not sure it needed the butter or oil though as I never
recoated the iron, but I didn't have any problems with the second or third 
or fourth wafers sticking.
 
So I've got a number of experiments I want to do. I think I'm going to
be real tired of eating wafers though by the Oct. 24 event.

I'm also planning on hypocras, a selection of dried fruit and comfits.
Does anyone have any favorite hypocras recipes (I don't have any in the
Florilegium).
