I remember vaguely some readings about the Spanish Gazpachos suggested
origin, the food in the Rome Army. Selon my sources (don´t remember now
where I read it) the soldiers in the legions had as "roadfood" a cold
soup, composed of garlic, vinager, salt and water. Maybe they had
cucumber on it too. But I have only vague references. It was supposed to
be eaten during their long periods of walking and climbing, when they
had not time to stay to cook anything.

PS_ the main difference with the Spanish recipe should in fact be the
tomatoes, indispensable at the Spanish but imposible before the
15-century.
