At first I thought it was a matter of salvaging various utensils and
dishes, but I realized nobody was packing the actual food into other,
expendable containers to leave behind for the bereaved (or whomever, as
I say this was a while ago and I'm not certain it was a funeral). The
best (and only) explanation I got for this behavior was something like,
"It's customary..."

I remember thinking it both bizarre and not a little tacky, but if it is
some kind of regional folkway, I can't complain. Has anybody run across
anything like this before? <

I've seen things done both ways, and I've found it usually depends on the
situation. If the food is there for the family of the deceased, it's usually
left in disposable containers, but if it's more of a potluck thing, it's
intended to help with the clean up. Most of the people involved will give
people who like a particular thing extra helpings to take home with them, in
the latter case, and the highest compliment given to a donor is that there
are only empty pans to take or throw away.
