As has been pointed out by Bear, there's a difference in relative
densities between sifted versus compacted flour (which generally means
non-sifted flour under normal earth gravity). You can get around five
ounces of flour, when pressed down, in a one-cup measure. Think in terms
of 3 1/2 cups semi-compressed, 4 cups sifted, per pound. Again, these
are approximate, and for home use. Bakers still generally use scales.
