I'm only guessing, but it might either be a Norman thang (i.e. the
king's protected deer being "what you hunt") or possibly a Colonial
Americanism (deer being _comparatively_ rare in England even in the 17th
century, colonists may have come to North America, seen most of it
crawling with deer, and been in heaven, deciding, again, that deer is
"what you hunt").

Again, only guesses.
