Unleavened bread crumbs would not be remiss in a period kosher recipe, IMO. 
Many of the more onerous kosher rules are simply not period but later 
additions to the more literal interpretation that was actually laid down in 
Old Testament writings.
IIRC, it was indicated that these recipes were 'period' recipes. Kosher laws 
have developed over the centuries and most of the onerous rules were placed 
well outside of 'period.' Also different sects have different 'rules' for 
kosher.
