I wanted to thank you for the responses to my question on the broth for
daryoles.
I actually found another recipe for the same thing that says "take the fat
of fresh broth" which makes things clearer. I was very interested to learn
the differences in today in what we consider a "side-dish" as opposed to a
dessert.
I'll post my results.
