I'll take a wild guess and say that most substitutions occurred in period
for the same reason as today:  availabililty.  They had no refrigeration
and no real commodities market, so that was even more of an issue.  No
rainchecks in Renaissance Europe.
I won a dessert revel by using that mind-set.   I made a tart using only
what was in my kitchen.
