Yes, I always check and see what is returned. I ask people (the servers and
cleaners) what was most returned. Also what people thought of such and such
a dish, and try and figure if it was returned because it was not popular or
because people were full. 
Though to be honest, the only recipe I've ever repeated at a feast is
Armored Turnips (by royal request). There are just so many dishes you can
make, I've never redone a dish in the 6 years I've been doing feasts. (I'm
discounting salad here ;-)
I do however find it useful to work out what style of dish people will
prefer at that time of year. I also make dishes I personally dislike (blanc
desirree, bean tart, etc) and find other people will happily eat them.
