slightly different in my canton.  I'm in charge of everything to do with the 
food.  I choose a head server who understands my needs, I line up a head 
dishwasher.

And...it goes a lot better if there is someone cleaning up as the
>cooking is being done...during the day and during the feast.

absolute must!
