Historically veal has always been taken from calves that have not tasted 
pasturage yet (e.g., unweaned). This averages 6 to 8 weeks old for the oldest 
veal.

Extending the definition to 6 mths. and then to 1 yr.old calves is a VERY 
modern innovation within the last 30 years or so.
