Stefan has many recipes using eggs in his Flore-thingy.

As a side note, the benefits of brown eggs over white eggs is a debate that 
extends back to at least Victorian times. Personally, I think they do taste 
richer and the definitely make better cakes than white ones.

Eggs are commercially classed accordingly: Jumbo, Extra Large, Large, Medium, 
Small, Peewee. A chicken can lay any size egg although breeds are used which 
lay consistently sized eggs.

Shell eggs are divided by size (class) according to weight. Minimum net 
weight per dozen: Jumbo - 30 ounces. Extra Large - 27 ounces. Large - 24 
ounces. Medium - 21 ounces. Small - 18 ounces.

Large eggs are usually what is specified in a recipe unless another size is 
stated. For example, if a recipe calls for 5 eggs (2 oz.) and you have medium 
eggs you should use 6 medium (1.75 oz.) eggs.
