<br><font size=2 face="sans-serif">IIRC, a large pressure canner is rated for a lot more pressure than a pressure pan.  My pressure pan releases pressure at 10 to 15 pounds, while my canner red-lines at 25 to 30 pounds.  Running cool water over a pressure pan is in the book, but I usually wait until the weight isn't jiggling any more.  Running cool water over my pressure canner is not recommended until the gauge reads "0" zero.  Even then, I'm cautious.  A person I know tried to quicken the process and ended up with exploding jars resembling hand grenades.  Thankfully, it was a serious scare, but not a serious injury.
