Most of us use wines as close to period types as is possible but using any 
wine would be better than leaving it out if the recipe calls for it, IMO. 
Extensive information has been posted to this list regarding not only 
vinifera varieties still grown but also specific information on a few brands 
that are still made with the same grapes in wine houses that have produced 
their wines since the middle ages. Est! Est! Est! (an Italian white wine) is 
such a product. Perhaps Stefan has posted this info to his Flora-thingy.
