Since we are so big on period terms for people in charge of the kitchen, 
let's generalize a little - the period term for this job is "harbinger" 
(defined as the person who went ahead of the army to locate and set up the 
next night's campsite, and/or ahead of the king or noble's party to arrange 
lodging for the night).
