The recipe I was referring to is a medieval recipe, after all, and like so 
many other things discussed on this list :) it has a number of different 
definitions.  This "white ravioli" is a dumpling.  I don't pretend to know 
why the author opted to call it a ravioli.  It is certainly a dumpling.
