I think that the Master was referring to it's sudden discovery by the yuppie 
crowd and the resulting 'let's jump on the bandwagon' rush of new restaurants 
and young newly trained inexperienced cooks....much like the current rush to 
push 'fusion' cuisine down our throats, so to speak. :-)
