To be able to spice by taste and still be able to write down an exact quantity, start with a measured amount of the spice in question that is several times what you may need. Add pinches (or whatever) until you have the taste right. Measure what's left and subtract from what you started with. The difference is the quantity that you write down Jehan Yves
