There is little to discuss. Head cheese does not contain vinegar. Souse does.

Scrapple on the other hand can be best described as a sort of meat flavored
polenta. Although corn meal and sometime wheat flour is used in it's
production, buckwheat flour is the most authentic starch for it's production,
Scrapple also contains pork liver and pork hearts. All the ingredients are
mixed together, cooked, put in loaf pans chilled, sliced dredged in flour and
fried. It is often served with maple syrup and soft fried eggs.
Head cheese and souse are prepared by boiling the head and then removing the
bones. The resulting mass is then mixed with the broth, and in the case of
souse vinegar is added, allowed to chill into a gelatinous mass and sliced
for serving cold. The garnish of choice is brown mustard.
