Black olives I'm fairly sure were around in period, but what they were used 
for I don't know.  Don't believe I've ever seen anything with pickled 
cucumbers, but that doesn't mean it doesn't exist.

There are a couple of fairly "short" cookie type recipes from Elizabethan 
times (Fair Cakes from Digbie, I think?), but I'm not sure I've ever seen a 
recipe that would result in a raised cake like the modern shortcake.  
Certainly a variety of whipped cream exists; it's called "snow".
