I like the idea, and I'd be willing to help with it, somewhat, but one of
the problems I foresee is that unless we have someone dedicated to the idea,
with Official Employees et al, it's not going to work. Cariadoc, you're
usually pretty busy all Pennsic, with teaching your classes, as is your
Lady. I'm pretty busy, too, doing my job as a Chirurgeon- after the shifts I
worked this Pennsic, I was exhausted. Stefan has all those classes he goes
to. Other folks have other issues and activities they need to deal with.
Adamantius would be my first choice of Head Cooks, but if we ever drag his
sorry self back to Pennsic, he'll be up to his ears in his EK MOAS duties-
and if he gives up that job, he'll be just as busy with other related stuff.
Gunthar is there for the fighting and politicking, as are many others we
have here on the List- Kiri, running her barony, for example.

So, who could we find to do it? Either those of us who are seriously into
cooking can't be there, have other responsibilities, or would be showing up
as Pennsic newbies- not a good idea, for a food merchant.

But suppose we DO find a Head Cook..... (and Heavens, I hope we can!!!!!)

I'd say we'd need a fairly simple menu, in which we have a few simple
basics, from which we can mix and match simple ingredients- rice, stock, and
roast meats, for example, with standardized pastries to be filled with
varying ingredients, and sallats, and a Plan, which would allow us to create
variants. To start, I'd say stay away from breakfasts- that's just too much
initial complication- perhaps start as a strictly lunch (midday meal) or
supper (evening meal) place?

I dunno- I'd like to hear from our pros such as Adamantius- if you were
doing it, how would you set it up, with modular basics, as are needed for
such an enterprise?

Myself, I'd be happy to smith such materials as would be needed for outdoor
cooking irons and utensils if we want to try to cook in a period manner as
well, but I'd need some designs to look at as well.

I dunno, I like the idea, but we really need to do some hard thinking about
it and its feasability first. But, as someone said, we have a year to think
and plan- shall I set up a List for that purpose?
