I agree with you - that's why I usually prefer to buy it unpasteurized.  However,
my unsuspecting guests will be transporting it home unrefrigerated and over
a long distance.  I don't want to have any surprises when they go to drink it
a week later.  I'm a little more cautious when it comes to feeding other people
and their children than I am when feeding myself.  And, if I tell them it is
unpasteurized, most of them will just throw it away because they won't believe
it's safe - and all that money and effort would be wasted.
