But the question is not whether salads existed in period (they did) 
but whether they were a common part of a meal. Le Menagier is 
interesting because it includes lots of listings of dishes for lots 
of different feasts. Judging by what a previous poster said, 
something under a quarter of them, all fish day menus, contained 
salads. And that's for feasts each of which contains a lot more 
dishes than an ordinary american meal.

It would be interesting to look through other collections of menus 
and see how common salads are.
