Niccolo asked:
> I knew I should have sent this right to you. . . forgive my lack of foresoight! How big a carcasse are we talking about at 6-9 months, and about how much meat? I'm thinking it couldn't be more than 15 pounds total carcasse dressed to roast.

I didn't mention this file earlier, because it sounded like you were going
to have someone else butcher it as well as kill it. But your question
above has me reconsidering this. So, you might find this file in the
ANIMALS section of the Florilegium to be of interest:
butch-goat-art (16K) 7/14/98 "Butchering a Live Goat, for (and
by)
                                       Beginners" by Charles McCathieNevile.

And perhaps some of the info in this file might be of interest:
butchering-msg (32K) 3/ 2/00 Overview of butchering livestock and game.

Does anyone know if there is going to be a another butchering class at
(or near) Pennsic this year? You can send me email, if that is a no-no
subject for this list.
