Anatre - wouldn´t that be a duck? (Gastronomy of Italy by Anna del Conte
gives anitra/anara/anatra.

Ficatelli are Corsican pork sausages but I don´t know if that is relevant
here.

The only reference I can find to zonchata says zonchata = giuncata, which is
a cheese type.
